This occasion
Less than its promise –
A green wave
Under your feet,
The place in the mouth
Once read the season
To an hour.
The rest
Being shuffled indoors:
Cereal cells,
Silage,
Too hard measures

The poem is inspired by recent research, showing that climate change and cheese quality are directly related.

In many dairy areas, cows rely on fresh mountain grass. However, as summer gets drier, grass becomes increasingly difficult to grow. This affects not only animal welfare, but also the flavor, texture and color of traditional cheeses made with milk.

To understand the impact, the researchers compared the two systems. A grass that mainly uses grazing. Another uses limited grazing corn-based feed. When reducing fresh ranches, the cheese flavor and color will also drop. But even keeping a small amount of fresh grass can help. It retains cheese quality, reduced methane emissions and improved feed efficiency. These findings suggest that keeping pastures in the diet still makes a difference during the dry summer months. It can help farmers, protect the climate and provide better cheese.
